Chocolate Chip Cookie Pancakes

A COOKIE in a PANCAKE, really what more could you ask for in life??? This recipe was inspired but Laura's (strange but good) oatmeal raisin cookie shake and it was the perfect dessert for breakfast! YUMMM

 Ingredients

2 Tbsp coconut flour
2 Tbsp pumpkin
1 tsp nutrtitional yeast
1/3 cup egg whties
1 Tbsp vanilla whey
2 Tbsp mashed banana
2 Tbsp almond milk
1/2 tsp Cinnamon
1 tsp vanilla extract
1/8 tsp butter extract
2 stevia packets
1/2 tsp baking powder
Dash salt
**Optional: 1 Tbsp mini enjoy life chocolate chips**

METHOD

Mix all ingredients and cook on a griddle. Batter will be super thick but don't worry, just flatten it out on your pan or griddle and flip once to cook through!

Pictured toppings: 2 Tbsp cottage cheese mixed with 1 Tbsp chocolate pb2 and walden farms syrup.

Macros without toppings for whole recipe: 157 calories, 2g fat,13g carbs, 18g protein

Voats (Veggie Oats)

  
Thats right veggie oats! Inspired by all the zucchini oats Ive seen on Instagram. This is a great way to get in your veggies and satisfy your sweet tooth.. NOM. Ive made a lot of versions but here is my peanut butter version :)

 RECIPE

In 3/4 cup boiling water add
1/2 cup riced cauliflower
1/4 cup grated zucchini
1/4 cup grated carrot
2 Tbsp oats
1 Tbsp TVP
1/2 Tbsp flaxseed meal
1 Tbsp peanut flour
1/2 Tbsp crunchy peanut butter
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp maple extract
1/2 tsp banana extract
Liquid toffee stevia drops 
Dash salt

Simmer until thick. Then stir in 1-2 Tbsp cellucor peanut butter marshmallow whey protein and one egg white. Stir continuously until smooth and fluffy.
 I always sweeten mine up a bit more with Walden Farms maple and caramel syrup!

To make PB&J Oats Pictured above just add in some chia jam!

Macros: 224 cal, 7g fat, 20g carbs, 21 g protein


THENNNN stuff an apple with them and bake at 375 for 20 minutes to make it even more epic :)

Salmon Dill Sauce Wrap Up




RECIPE:

For the wrap mix:
1/3 cup egg whites
1 Tbsp coconut flour
1 tsp psyllium husk
1/4 tsp baking powder
Mrs Dash Garlic and Herb Seasoning
Dash Salt

Cook like a crepe

For Lemon Dill Sauce mix:
2 Tbsp greek yogurt
1 tsp lemon juice
1/4 tsp dill
1/8 tsp each onion powder, garlic powder, mustard powder
Dash salt 

Layer dill sauce, salmon, and alfalfa sprouts on crepe and roll up!

Peanut Butter Banana Funfetti Pancakes

HALLELUJAH these are delicoius!

 RECIPE

1 Tbsp wheat germ
2 tsp coconut flour
1 Tbsp peanut butter marshmallow whey 
1 Tbsp peanut flour 
1/4 tsp baking powder
1/3 cup egg whites
3 Tbsp cottage cheese
1 Tbsp greek yogurt
1/2 Tbsp vanilla extract
1 tsp banana extract
Dash salt, stevia, cinnamon

Cook pancakes like normal but before flipping add some SPRINKLES to the uncooked side!

Macros for pancakes without topping:
212 calories, 5g fat, 19g carbs, 25g protein

Salmon Zucchini and Sweet Potato Sushi

I am no master of sushi.
However... I like to make my food pretty.
TheCavery got me making rolls again, so here's my version of sushi!


Directions

You will need 2 Tbsp rice, grated carrot, julienned zucchini, julienned sweet potato, mashed avocado, and smoked salmon.

I layed out the smoked salmon in strips and layered juliened zucchini or julienned sweet potato on top. Then I put a little rice and carrot and mashed avocado in each. Rolled them up and the smoked salmon was sticky enough to keep them together!

I also made a spicy sauce to dip in made from mixing 2 Tbsp greek yogurt with 1/4 tsp sriracha and a splash of lime juice. 

Paleo Almond Crusted Sweet Potato and Bacon Roll Up

That's a Mouthful of a Recipe Title!

Directions

Julienne a Sweet Potato
Rub egg white on both sides of slices and sprinkle a mix of crushed almonds and paprika on both sides. 
Bake at 350 degrees for 10 minutes, then flip and bake 6 more minutes

Layered half with smashed avocado and spaghetti squash
Layered half with cooked turkey bacon and alfalfa sprouts

YUM 
 

Sweet Potato Nut Butter Roll Up


These are very easy, simple and delicous!

Directions:

Julienne a sweet potato and spray the slices with coconut oil and sprinkle with cinnamon.
Bake in oven at 350 degrees for 12 minutes.
Remove and coat with nutzo butter.
Roll up and top with Walden Farms pancake syrup!
